- 2 cups heavy cream cold
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 tablespoons vanilla instant pudding
- ⅔ cup Irish cream
- 1 lb mascarpone cheese room temp
- 27 ladyfingers
- 1 cup espresso
- 2 tablespoons Irish cream
- 2 tablespoons cocoa powder
Instructions
- In a large mixing bowl, combine the cold heavy cream, sugar, Irish cream, vanilla extract, and vanilla instant pudding. Mix with an electric hand mixer until soft peaks form.
- Add the room-temperature mascarpone cheese and blend until smooth and creamy. Be careful not to overmix to avoid curdling.
- Prepare a mixture of espresso and Irish cream in a shallow bowl. Quickly dip the ladyfingers into the coffee mixture for 1-2 seconds and layer them evenly in a 13 by 9-inch baking dish.
- Spread half of the mascarpone mixture over the soaked ladyfingers and smooth out with a spatula.
- Add another layer of the dipped ladyfingers followed by a thin layer of the mascarpone cream.
- Fill a piping bag with the remaining filling and pipe dollops on top of the mascarpone layer.
- Cover with plastic wrap and refrigerate for at least 4 hours to let the ladyfingers soften. Before serving, dust generously with cocoa powder.
Notes
Store leftovers in the fridge for up to 3 days.
For a stronger coffee flavor, use a more robust espresso.
You can substitute the Irish cream with a non-alcoholic version if preferred.
