- 1 cup finely grated carrots
- 1 cup mashed overripe bananas
- 1 cup packed light brown sugar
- 1/2 cup vegetable oil
- 2 large eggs, at room temperature
- 2 teaspoons vanilla extract
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1 1/2 teaspoons ground ginger
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/3 cup sweetened shredded coconut
- 1/3 cup walnuts, finely chopped
- 1 ounce cream cheese
- 1 1/2 cups powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract

Instructions
- Preheat the oven to 350°F. Line a 1-pound loaf pan with parchment paper on all sides.
- In a large mixing bowl, combine the grated carrots, mashed bananas, brown sugar, vegetable oil, eggs, and vanilla. Whisk until combined.
- Add the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt; fold the dry into the wet until combined and no streaks of flour remain.
- Fold in the shredded coconut and walnuts.
- Transfer the batter into the prepared loaf pan and spread out evenly. Bake for about 55 minutes until domed and a knife inserted comes out clean.
- Cool slightly in the pan on a wire rack. Lift the bread using the parchment paper and transfer to a cutting board.
- To make the cream cheese icing, warm the cream cheese in the microwave for 15 seconds. Mix with powdered sugar, milk, vanilla, and salt until smooth. Pour over the bread and let it set before slicing.
