Description

These Carrot Easter Rice Krispie Treat Ideas are an enjoyable twist on a classic dessert, featuring buttery marshmallows and bright candy melts to create fun, carrot-shaped treats. Perfect for holiday gatherings or an afternoon snack, they’re easy to make and irresistibly delicious.

Ingredients

Scale
  • ½ cup butter
  • 20 oz mini marshmallows
  • 9 oz box rice crispy cereal
  • 2 tsp vanilla
  • ½ tsp salt
  • red and orange food coloring
  • 1 cup green candy melts
  • 1 cup orange candy melts
  • orange sprinkles

Instructions

  1. Line a 9×13 pan with parchment paper.
  2. Melt butter in a large pot over medium-low heat, then add 1 1/2 bags of mini marshmallows and set the rest aside.
  3. Stir continuously until the marshmallows fully melt, keeping the heat on low.
  4. Remove from heat, mix in vanilla, salt, and food colorings until desired color is achieved.
  5. Incorporate half of the rice crispy cereal into the marshmallow mixture, scraping the bottom well.
  6. Add the remaining marshmallows and rice cereal, and mix thoroughly.
  7. Pour the mixture into the prepared pan, spreading it evenly.
  8. Allow to cool for 10-15 minutes.
  9. Transfer the treat to a cutting board, using the parchment paper.
  10. Cut into 8 equal sections, then cut each section diagonally into triangle shapes.
  11. Melt green candy melts in the microwave in 30-second increments until smooth; place in a piping bag.
  12. Pipe out 12 V-shaped stems on parchment paper and refrigerate for 10 minutes to harden.
  13. Flip the rice krispie treats onto parchment and cut them into carrot shapes.
  14. Melt orange candy melts and drizzle over the carrot-shaped treats, adding sprinkles immediately after.
  15. Top each carrot with a dot of orange candy melt to stick the stem.

Notes

For best results, ensure the heat is low when melting the marshmallows to avoid burning.
Feel free to adjust food coloring to achieve your desired carrot shade.
These treats can be made in advance and stored in an airtight container.
