- 2 ½ cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup unsalted butter
- 1 cup packed brown sugar
- ½ cup sugar
- 1 large egg
- 2 large egg yolks
- 3 teaspoons vanilla extract
- 10 ounces chocolate chips, milk or semi-sweet, your choice!
- flaked salt, for topping
Instructions
- Preheat the oven to 350 degrees F.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- Heat an oven-safe (preferably cast iron) 12-inch skillet over low heat for about 5 minutes. Add the butter and melt completely. Stir in both sugars with a wooden spoon and then turn off the heat.
- In a separate bowl, whisk together the egg and egg yolks. Add this to the skillet sugar mixture and quickly mix to prevent the eggs from cooking. Stir in the vanilla extract right after.
- Combine the dry ingredients with the wet ingredients until just mixed. This may take a few minutes, and the batter will be thick. You can clean the top of the skillet with a damp paper towel if needed.
- Fold in the chocolate chips. Bake the skillet cookie for 20-25 minutes or until it's mostly set in the center. Top with flaked sea salt before serving.
- Serve warm, ideally with a scoop of vanilla ice cream.
Notes
Using a cast iron skillet will give the cookie a deliciously crispy edge.
This skillet cookie can be customized with different types of chocolate chips or nuts for added texture.
Store any leftovers in an airtight container at room temperature.
