These Circus Animal Cookie Rice Krispie Treats are a delightful blend of flavors with marshmallows and colorful cookies. Perfect for gatherings or a sweet snack!
Ingredients
- circus animal cookies – 9 ounces
- mini marshmallows – 10 ounces
- rice krispies cereal – 6 cups
- unsalted butter – 4 tablespoons
- multi-colored nonpareils – 3 tablespoons
- colored sprinkles – 3 tablespoons
- white chocolate chips – 1/2 cup
- red food coloring – 1-2 drops
- heavy cream (optional) – 1/2 teaspoon
Instructions
- Grease a 9×13-inch baking dish with cooking spray.
- Pulse the circus animal cookies in a food processor until you have a mix of crumbs and small pieces, reserving 1/2 cup for later.
- In a large pot, melt the unsalted butter and mini marshmallows over low heat, stirring constantly until smooth.
- Remove from heat and fold in the rice krispies cereal, cookie crumbles, and 2 tablespoons of each type of sprinkle.
- Gently press the mixture into the prepared pan using a greased silicone spatula.
- Top the mixture with the reserved cookie pieces.
- Melt the white chocolate chips in two separate bowls in the microwave for 30 seconds.
- Drizzle the first bowl of plain white chocolate over the treats using a sandwich bag with the corner cut off.
- Add red food coloring to the second bowl to create pink chocolate, then drizzle it over the treats in the opposite direction.
- Top with remaining sprinkles and let cool until set.
Notes
For different flavors, try adding other types of cookies or toppings.
Store treats in an airtight container to keep them fresh.
