Description

These Easy Vegan Funfetti Cake Mix Cookies are delightful treats made with only four ingredients. They’re quick to prepare and absolutely delicious—perfect for any occasion!


Ingredients

  • 1 box (15.25 oz) vegan funfetti cake mix
  • 1/2 cup vegan butter, melted and cooled
  • 1/4 cup nondairy milk
  • 1/2 cup vegan mini chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two large cookie sheets with parchment paper or silicone baking mats.
  2. In a mixing bowl, combine the cake mix, melted vegan butter, and nondairy milk. Stir until you achieve a thick, tacky dough.
  3. If desired, fold in vegan mini chocolate chips or additional sprinkles.
  4. Scoop about 1.5 tablespoons of dough, roll it into a ball, and place on the baking sheet, leaving 2 inches of space between each cookie.
  5. Bake for 9 to 11 minutes, then let them sit on the hot baking sheet for 10 minutes to firm up.

Notes

For a fun variation, try adding more sprinkles on top before baking.
Make sure the vegan butter has cooled to room temperature before mixing to avoid melting the dough.
