Instructions
- Preheat oven to 400 F and place a 7-10" cast iron pan inside to heat.
- In a medium bowl, whisk together ricotta, egg, milk, sugar, melted ghee, and vanilla extract until combined.
- Sprinkle baking powder and salt over the mixture and whisk again to combine.
- Fold in the flour with a spatula until you have a thick, lumpy batter.
- Carefully remove the hot cast iron pan and add ghee, swirling to coat the bottom.
- Spoon a scant 1/2 cup of batter per pancake into the pan, leaving space for them to puff up.
- Bake for 9 minutes, then flip each pancake carefully.
- Add more ghee if necessary and return the pan to the oven for another 6-8 minutes, until golden brown.
- Serve warm with butter and syrup.
