Description

Ingredients

  • 1 cup whole-milk ricotta
  • 1 large egg
  • 2 tbsp milk
  • 2 tbsp granulated sugar
  • 2 tsp ghee or butter, melted
  • 1 tsp vanilla extract (optional)
  • 4 tsp baking powder
  • 1/2 tsp kosher salt
  • 1 cup flour

Instructions

  1. Preheat oven to 400 F and place a 7-10" cast iron pan inside to heat.
  2. In a medium bowl, whisk together ricotta, egg, milk, sugar, melted ghee, and vanilla extract until combined.
  3. Sprinkle baking powder and salt over the mixture and whisk again to combine.
  4. Fold in the flour with a spatula until you have a thick, lumpy batter.
  5. Carefully remove the hot cast iron pan and add ghee, swirling to coat the bottom.
  6. Spoon a scant 1/2 cup of batter per pancake into the pan, leaving space for them to puff up.
  7. Bake for 9 minutes, then flip each pancake carefully.
  8. Add more ghee if necessary and return the pan to the oven for another 6-8 minutes, until golden brown.
  9. Serve warm with butter and syrup.
