Description

These Green Velvet Cupcakes are uniquely flavored and visually stunning, making them the perfect sweet treat for St. Patrick’s Day. With a rich cream cheese frosting and a hint of vanilla, they are simple to prepare and irresistibly delicious!


Ingredients

  • 1 ¼ cup granulated sugar
  • ½ cup butter – unsalted
  • 3 eggs
  • 3 drops green food coloring – or more
  • 2 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 ¼ teaspoon baking powder
  • 1 cup buttermilk*
  • 2 teaspoon vanilla extract
  • 8 ounces cream cheese – softened
  • ½ cup unsalted butter – softened
  • 4 cups confectioner's sugar
  • 1 teaspoon vanilla extract
  • green sanding sugar or shamrock sprinkles

Instructions

  • Preheat your oven to 350° F and line muffin pans with 18 cupcake liners.
  • In a large bowl, cream the granulated sugar and unsalted butter together until fluffy.
  • Add the eggs one at a time, beating well after each addition to combine adequately.
  • Stir in the green food coloring and vanilla extract until fully incorporated.
  • In a separate bowl, whisk together the all-purpose flour, salt, baking soda, and baking powder thoroughly.
  • Pour the buttermilk into the wet ingredients, mixing until smooth.
  • Gradually add the dry ingredients to the wet mixture, beating just until combined.
  • Scoop the batter into the prepared liners, filling them about ¾ full.
  • Bake in the preheated oven for approximately 17 minutes, or until a toothpick comes out clean.

Notes

Feel free to adjust the amount of food coloring to achieve your desired shade of green.
These cupcakes are best enjoyed with a generous swirl of cream cheese frosting on top.
