  • 1 cup whole milk, at room temperature
  • ¼ cup unsalted butter, cubed
  • 1 large egg, for the dough
  • 1 large egg, beaten, for egg wash

Instructions

  1. In a small saucepan, mix water, milk, and 2 tablespoons of flour for the tangzhong. Whisk together and cook over medium heat until thickened, about 1 minute.
  2. Continue to cook for an additional 1 ½ to 2 minutes until the texture resembles thick mashed potatoes.
  3. Transfer the tangzhong into the bowl of a stand mixer.
