- 24 thin chocolate mint cookies divided
- 1 cup flour
- 1 cup sugar
- 6 tablespoons cocoa powder sifted
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 cup vegetable oil
- 1/2 cup buttermilk
- 1 egg
- 1 teaspoon vanilla
- 1/2 cup hot coffee
- 1 cup salted butter room temperature
- 3 1/2 cups powdered sugar
- 2 tablespoons milk
- 1/4 teaspoon peppermint extract
- 2 drops green food coloring
- Additional cookies for garnish if desired
Instructions
- Preheat the oven to 350°F and line a cupcake tin with liners.
- Place a chocolate mint cookie at the bottom of each liner.
- Crush the remaining cookies in a bag to create pea-sized crumbs and set aside.
- In a mixing bowl, combine flour, sugar, cocoa powder, salt, baking powder, and baking soda.
- In a separate bowl, whisk together oil, buttermilk, egg, and vanilla. Gradually mix in the hot coffee, ensuring the eggs don’t cook.
- Combine the wet ingredients with the dry ingredients and mix until well combined, then beat on high for two minutes, scraping sides as needed. Stir in cookie crumbs.
- Fill the cupcake liners about 2/3 full and bake for 14-17 minutes until a toothpick comes out clean.
- Cool in the pan briefly, then transfer to a wire rack to cool completely.
- For frosting, beat softened butter in a stand mixer until fluffy. Gradually add powdered sugar, milk, peppermint extract, and green food coloring, mixing until desired consistency is reached.
- Frost the cooled cupcakes and garnish with additional cookies.
Notes
For a stronger mint flavor, you can add more peppermint extract to the frosting.
Ensure cupcakes are completely cool before frosting to prevent melting.
Store any leftovers in an airtight container at room temperature.
