Description

These Oreo Cheesecake Bites are a delicious treat that combines the rich flavors of cream cheese and chocolate with the iconic Oreo cookies. Perfect for gatherings, they are easy to make and will be a hit at any dessert table.


Ingredients

  • 24 Oreo cookies
  • 4 tbsp butter, melted
  • 1 cup heavy cream
  • 1 cup chocolate chips
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 tbsp cornstarch
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/4 cup powdered sugar
  • 1/2 cup marshmallow cream
  • 1/2 cup mini Oreo cookies

Instructions

  1. Process Oreo cookies into crumbs using a food processor.
  2. Melt the butter and combine it with the crumbs, then press into the bottom of an 8-inch square baking dish lined with parchment or foil.
  3. Bake the crust at 350°F for about 8 minutes, then allow to cool while you prepare the filling.
  4. In a double boiler, warm the heavy cream on low, then add chocolate chips and stir until melted. Set aside.
  5. In a large bowl, beat cream cheese, sugar, and cornstarch until fluffy, then mix in sour cream, vanilla, and eggs. Gradually beat in the chocolate mixture.
  6. Pour the filling into the cooled crust and bake at 300°F for about 35 minutes. Turn off the oven and let the cheesecake sit inside for an additional 20 minutes.
  7. Remove and let cool, then refrigerate for at least 3 hours before cutting into small bites.
  8. For garnish, beat together butter, powdered sugar, marshmallow cream, and heavy cream until fluffy. Pipe a swirl on each bite and top with a mini Oreo.

Notes

Using a double boiler helps prevent the chocolate from burning while melting.
Ensure the cheesecake cools completely before refrigerating for the best texture.
