- 4 ¾ cups pastry flour
- 1 tablespoon baking powder
- 1 tablespoon kosher salt
- 1 ¼ cups granulated sugar
- 2 ½ tablespoons unsalted butter
- 5 egg yolks
- 1 ½ cups sour cream
- 96 oz vegetable oil (for frying)
- ⅓ cups whole milk
- 1 teaspoon kosher salt
- 3 ¼ cups powdered sugar
Instructions
- In a large bowl, whisk together flour, baking powder, and kosher salt. Set aside.
- Line a large mixing bowl with plastic wrap, spraying the surface with nonstick spray and setting aside.
- In a stand mixer with the paddle attachment, beat granulated sugar and butter on high speed until fully incorporated.
- Add egg yolks, continuing to beat until the mixture lightens and volume increases, about 2 minutes. Scrape down the mixture to ensure even incorporation.
- With the mixer on low, gradually add dry ingredients and sour cream alternately until fully incorporated, taking care not to overmix.
- Transfer the dough to the plastic wrap lined bowl. Spray the top with nonstick spray and cover. Refrigerate for 60 minutes.
Notes
For best results, do not overmix the dough to prevent tough donuts.
The dough can be refrigerated for up to 2 days before frying.
