- 1 Single pie crust (homemade or store-bought)
- 4–5 strips bacon (diced)
- ½ cup onion (small diced)
- 2 garlic cloves (minced)
- 2 cups fresh spinach (chopped)
- 4 large eggs
- 1 cup shredded Swiss cheese
- ½ cup shredded Parmesan cheese
- 1 cup half and half
Instructions
- Prepare the pie crust by rolling it out on a floured surface to 13 inches wide and transfer it to a 9-inch pie dish. Trim and crimp the edges, then freeze for 30 minutes and preheat the oven to 425°F.
- Transfer the frozen pie crust to a sheet pan, cover with greased foil pressing it down, and fill with pie weights or dried beans.
- Bake for 10-15 minutes until the edges of the crust are dry and set, with some browning acceptable.
- Remove from the oven and carefully take out the foil and weights. Set aside to cool.
- Reduce the oven temperature to 350°F.
- In a skillet, sauté bacon over medium heat until crispy, about 5 minutes, stirring frequently. Transfer to paper towels to absorb excess grease.
- Sauté onions and garlic in leftover bacon grease until onions are translucent, about 3-5 minutes. Add spinach and cook for another 1-2 minutes until wilted.
- Add the cooked mixture to the pie shell with the bacon and let cool slightly.
- Whisk together the eggs, half and half, and both cheeses, seasoning with salt and pepper. Pour into the pie shell, ensuring an even layer.
- Bake for 40-50 minutes until the center is mostly set but slightly wobbles when shaken.
- Allow the quiche to cool for at least 20 minutes before slicing. Serve warm, at room temperature, or chilled.
