Description

  • 1 cup (224g) unsalted butter, melted and cooled
  • 1 cup (200g) granulated sugar
  • 1 large egg + 1 egg yolk
  • 2 tsp vanilla extract
  • 3/4 tsp baking soda
  • 3/4 tsp kosher salt
  • 2 1/2 cups (320g) all-purpose flour, spooned and leveled
  • 1/2 cup (160g) strawberry preserves, chilled overnight
  • raw sugar, for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet.
  2. In a large bowl, mix the melted butter and granulated sugar until well combined.
  3. Add the large egg and egg yolk along with the vanilla extract. Stir until smooth.
  4. In a separate bowl, whisk together the baking soda, kosher salt, and all-purpose flour.
  5. Gradually incorporate the dry mixture into the wet one until a dough forms.
  6. Using a cookie scoop, place rounded dough balls onto the prepared baking sheet, leaving space between each.
  7. Make a small indentation in the center of each dough ball and fill with chilled strawberry preserves.
  8. Sprinkle raw sugar on top of each cookie before baking.
  9. Bake for approximately 12 minutes, or until the edges are golden. Let cool before serving.

Notes

Chill the dough for about 30 minutes if it feels too soft to handle.
Feel free to substitute with another fruit preserve if desired.
Storage: Keep cookies in an airtight container for up to a week.
