- 8 oz white chocolate, chopped
- 1 cup strawberries, tops removed
- 1/2 cup heavy cream
- 1/2 cup powdered sugar or sprinkles, for rolling
Instructions
- Place the chopped white chocolate in a large heat-proof bowl and set aside.
- Blend the strawberries in a blender or food processor until pureed, then strain to remove seeds and flesh.
- Measure out ¼ cup of the puree into a small saucepan, adding heavy cream to it, and heat over medium until bubbly.
- Simmer for 30-60 seconds, then remove from heat and pour over the chocolate, letting it sit for 1 minute.
- Stir the mixture slowly with a spatula until smooth, reheating gently if necessary.
- Cover with plastic wrap pressed to the surface and let it sit at room temperature for 1 hour, then refrigerate for at least 6 hours, preferably overnight.
- Line a baking sheet with parchment paper and set aside powdered sugar or sprinkles in a bowl.
- Scoop ganache and roll into balls, then roll in the powdered sugar or sprinkles and place on the baking sheet.
- Store in a single layer in the fridge until serving or freeze for up to 2 months.
