Description

This Vanilla Cake is delightful with its fluffy texture and rich flavor. Simple ingredients come together to create a beautiful cake, perfect for celebrations or just a sweet treat at home!


Ingredients

  • 3 1/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 cup dry milk powder
  • 1 1/2 cups unsalted butter, softened
  • 1/2 cup vegetable oil
  • 2 cups granulated sugar
  • 6 large egg whites
  • 1 tablespoon vanilla bean paste
  • 1 cup sour cream
  • 1 1/2 cups buttermilk
  • 2 cups powdered sugar
  • 8 oz cream cheese, softened

Instructions

  1. Preheat the oven to 350℉ and prepare three 8-inch cake pans with nonstick spray and parchment paper.
  2. In a medium bowl, sift together the flour, baking powder, baking soda, salt, and dry milk powder.
  3. In a large mixing bowl, beat the butter, oil, and sugar on high speed for 2 minutes until fluffy and white.
  4. Add egg whites, vanilla bean paste, and sour cream to the mixture. Mix on medium speed for 1 minute.
  5. Incorporate the dry ingredients and buttermilk, mixing on low speed until just combined. Scrape the bowl to ensure it's evenly mixed.
  6. Divide the batter among the three prepared cake pans and bake for 25-28 minutes, or until a toothpick comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then transfer to a cooling rack to cool completely.
  8. For the frosting, sift the powdered sugar in a large bowl and set aside.
  9. Beat the butter on high speed for 2 minutes, then add cream cheese and mix for 1 minute.
  10. Gradually incorporate half of the powdered sugar, mixing on low, then add the remaining powdered sugar and vanilla bean paste and mix until creamy.
  11. To assemble, cut off the domes of the cake layers with a serrated knife.
  12. Spread 1 cup of frosting on the first layer, add the second layer, and repeat. Place the final layer upside down.
  13. Frost the entire cake with a light layer and freeze for 15 minutes to set the crumb coat before decorating.

Notes

Ensure that all your ingredients are at room temperature to achieve the best texture.
For an added flavor boost, consider using vanilla extract in addition to the vanilla bean paste.
The cake layers can be made a day in advance and stored in the fridge before frosting.
