- 1/2 cup jam or preserves
Instructions
- Cream the butter in a mixing bowl with an electric mixer until smooth and free of lumps; mix in sugar until light and fluffy.
- Add egg yolks and vanilla extract, combining well. Gradually mix in half of the flour, cornstarch, and salt, then the remaining flour until the dough is crumbly but smooth.
- Scoop level tablespoons of dough, roll into smooth balls, and optionally coat in granulated sugar.
- Place dough balls one inch apart on a parchment-lined baking sheet and press indentations using a floured measuring spoon.
- Spoon about one teaspoon of jam into each indentation. Chill in the fridge for at least 45 minutes.
- Preheat the oven to 375°F and line baking sheets with parchment. Place chilled cookies two inches apart on the sheets, about 12-13 per sheet.
- Bake cookies for 13-15 minutes, until golden at the edges. Let cool on the sheet for 15 minutes before transferring to a cooling rack.
