Description

These Thumbprint Cookies are a delightful treat, featuring a buttery base filled with your favorite jam. Simple to prepare, they offer a perfect blend of flavors, making them a great choice for any occasion.


Ingredients

  • 1 cup unsalted butter
  • 3/4 cup granulated sugar
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1/4 tsp salt
  • 1/2 cup granulated sugar (for rolling)
  • 1/2 cup jam or preserves

Instructions

  1. Cream the butter in a mixing bowl with an electric mixer until smooth and free of lumps; mix in sugar until light and fluffy.
  2. Add egg yolks and vanilla extract, combining well. Gradually mix in half of the flour, cornstarch, and salt, then the remaining flour until the dough is crumbly but smooth.
  3. Scoop level tablespoons of dough, roll into smooth balls, and optionally coat in granulated sugar.
  4. Place dough balls one inch apart on a parchment-lined baking sheet and press indentations using a floured measuring spoon.
  5. Spoon about one teaspoon of jam into each indentation. Chill in the fridge for at least 45 minutes.
  6. Preheat the oven to 375°F and line baking sheets with parchment. Place chilled cookies two inches apart on the sheets, about 12-13 per sheet.
  7. Bake cookies for 13-15 minutes, until golden at the edges. Let cool on the sheet for 15 minutes before transferring to a cooling rack.
