- 100g butter
- 150g sugar
- 1 tsp mixed spice
- 1 zest and juice of lemon
- 250g plain flour
- 100g currants
- 50ml milk
Instructions
- Add cold butter cubes, sugar, mixed spice, lemon, and plain flour to a large bowl.
- Rub the mixture with your fingertips until breadcrumbs form.
- Stir in the currants evenly.
- Gradually add milk, kneading until the dough comes together without becoming wet.
- Wrap the dough in clingfilm and chill for at least 30 minutes.
- Preheat the oven to 180ºC/160ºC fan and line 2-3 large trays with parchment paper.
- Transfer the dough to a lightly floured surface.
- Roll out the dough to about 0.5cm thick.
- Use an 8cm cutter to cut out biscuits, re-rolling leftover dough until used up.
- Place the biscuits on lined trays and bake for 12-15 minutes until golden.
- Cool on the trays for 15 minutes before transferring to a wire rack.
Notes
Ensure not to add too much milk at once to avoid making the dough too wet.
Chilling the dough helps retain its shape while baking. Note that recipes may vary in bake time based on the oven used.
