Description

These Valentine Homemade Blueberry Bagels offer a delightful burst of blueberry flavor in every bite. With simple ingredients and easy preparation, they make an amazing breakfast or snack option that everyone will love!


Ingredients

Scale
  • 1 and 1/2 cups (about 200g) fresh or frozen blueberries
  • 1/4 cup (50g) granulated sugar, divided
  • 1 cup (240g/ml) warm water (between 100–110°f/38–43°c)
  • 1 tablespoon instant or active dry yeast*
  • 1 teaspoon pure vanilla extract
  • 3/4 cup (120g) dried blueberries
  • 3 and 3/4 cups (488g) bread flour (spooned & leveled), plus more as needed*
  • 2 teaspoons salt
  • for coating the bowl: nonstick spray or 2 teaspoons butter or olive oil
  • 2 quarts (1.9l) water
  • 1/4 cup (85g) honey or barley malt syrup
  • egg wash: 1 egg white beaten with 1 tablespoon water

Instructions

  • Cook blueberries and half the sugar in a saucepan over medium-low heat for about 10 minutes until you have a sauce. Cool slightly.
  • In a stand mixer bowl, whisk warm water, remaining sugar, and yeast. Let sit for 5-10 minutes until foamy.
  • Add cooled blueberry sauce, vanilla extract, dried blueberries, 1 cup of bread flour, and salt to the yeast mixture. Beat until incorporated, then add remaining flour and mix until dough pulls away from sides.
  • Knead the dough for 6-8 minutes until smooth and elastic. Adjust with flour or water as needed for consistency.
  • Grease a large bowl, place dough inside, cover, and let rise for 2 hours until doubled in size.
  • Line baking sheets with parchment. Punch down the risen dough, divide into 8 equal pieces, and shape into bagels.
  • Preheat the oven to 425°F (218°C) and prepare boiling water with honey or syrup.
  • Boil bagels in batches for 1 minute on each side, then place on baking sheets.
  • Brush bagels with egg wash before baking for 26-30 minutes until browned. Let cool on sheets for 20 minutes before transferring to a rack.

Notes

For best results, use fresh blueberries when possible.
If the dough feels sticky, sprinkle a little flour as needed during kneading.
Store leftover bagels in an airtight container at room temperature for up to 2 days.
