- 8 ounce block cream cheese, softened to room temperature
- ⅓ cup cream cheese chips, roughly chopped
- 2 10 oz bags Ghirardelli vanilla melting wafers
- ½ cup Wilton pink candy melts
- ½ cup Wilton bright pink candy melts
- Sprinkles (optional)
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper. Heat treat the cake mix to eliminate any bacteria.
- Spread the cake mix onto the prepared baking sheet and bake for 5 minutes. Allow to cool completely on a wire rack after removing from the oven.
- In a medium mixing bowl, beat softened cream cheese with a hand mixer on medium-high speed until smooth and creamy.
- Fold in the cooled cake mix with the cream cheese using a rubber spatula, then mix thoroughly with a hand mixer until a dough consistency is achieved.
- Gently fold in the cream cheese chips until evenly combined.
- Cover the cake mix dough with plastic wrap and chill in the refrigerator for 2 hours.
- Line two baking sheets with parchment paper. Scoop dough using a 1 ½ tablespoon cookie scoop and roll into balls. Let them rest for about 15 minutes before coating.
- Prepare a double boiler or microwave to melt the vanilla melting wafers over low heat, stirring frequently until smooth.
- Dip each dough ball into the melted vanilla wafers using a fork, ensuring they are fully coated. Tap off excess and place onto the lined baking sheet.
- Before the coating dries, sprinkle your choice of sprinkles on half of the dough balls.
- Melt the pink candy melts in separate piping bags in the microwave. Drizzle over the coated cake balls afterwards.
- Allow to set completely before serving.
Notes
Use less cream cheese for a lighter option.
Chilling the dough is essential for preventing cracks in the coating. Allow sufficient time for cooling before proceeding.
The double boiler method provides a more consistent melting temperature for the coating.
