Description

These Valentine strawberry yogurt bites feature fresh strawberries, creamy yogurt, and crunchy granola. Perfect for a sweet treat, they are easy to prepare and ideal for any occasion.


Ingredients

  • ½ cup granola, more for topping
  • 1 cup yogurt of choice
  • ½ cup fresh strawberries, hulled and diced
  • ¾ cup fresh strawberries, sliced or chopped
  • ¼ cup granola, smaller pieces work better

Instructions

  • Line a 12-cup muffin pan with muffin liners or use a 12-cup silicone baking pan.
  • Sprinkle about 2 teaspoons of granola into the bottom of each cup and set aside.
  • In a medium bowl, combine yogurt and diced strawberries. Mash the strawberries into the yogurt using a pastry cutter or fork, leaving some chunks.
  • Mix thoroughly with a rubber spatula or wooden spoon until well combined.
  • Spoon 2 tablespoons of the yogurt mixture into each cup, tapping the pan to smooth out the layer.
  • Press about 1 tablespoon of sliced strawberries into the tops of each cup.
  • Sprinkle about 1 teaspoon of granola over the strawberries in each cup.
  • Place the pan in the freezer and chill until firm, approximately 2-4 hours.
  • Pop out each frozen yogurt bite and let them sit for a few minutes before enjoying.

Notes

Feel free to add honey or maple syrup for added sweetness if desired.
Experiment with different fruits or yogurt flavors to personalize your bites.
These can be stored in the freezer for a quick snack anytime.
