Description

These Valentine’s Day Decadent Gingerbread Latte Mousse Domes combine rich flavors of espresso, white chocolate, and spices, making for an exquisite homemade dessert that’s simple to prepare and sure to impress your loved ones.


Ingredients

  • 1 cup espresso
  • 1/2 cup brown sugar
  • 1 cup white chocolate
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • 1 tablespoon gelatin
  • 1 cup mascarpone
  • 1/2 cup molasses
  • 1 egg yolk
  • 2 teaspoons ginger
  • glazing ingredients

Instructions

  • Bloom the gelatin by soaking it in cold water.
  • In a saucepan, combine warm espresso with brown sugar, stirring until dissolved. Add white chocolate, cinnamon, cloves, and nutmeg, stirring until smooth. Remove from heat and let cool.
  • In a mixing bowl, beat mascarpone and heavy cream until soft peaks form. Fold in the cooled mousse base until smooth and fluffy.
  • In another bowl, whisk together flour, ginger, and a pinch of salt. Mix in molasses and egg yolk until a soft dough forms. Roll out and cut circles for the cookie base.
  • Grease silicone dome molds and fill them with mousse mixture, leaving space at the top. Press cookie rounds into the mousse. Cover and freeze overnight.
  • Once solid, warm glazing ingredients. Remove mousse domes from molds and place on a wire rack over a baking sheet. Pour glaze over the domes.
  • Serve domes on an elegant plate, optionally decorating with cocoa powder or mini gingerbread cookies.
