Description

  • ½ teaspoon baking soda

  • ½ cup (4 oz/115 g) butter, softened
  • ¾ cup (6 oz/170 g) plus ¼ cup (2 oz/57 g) granulated sugar
  • 1 large egg, at room temperature
  • ½ teaspoon vanilla extract
  • 1 cup (8 oz/225 g) block cream cheese, at room temperature
  • 1 ⅓ cups (5 ⅓ oz/ 152 g) powdered sugar, sifted
  • ½ teaspoon vanilla extract
  • ¼ cup (2 fl oz/60 ml) heavy whipping cream
  • 2½ cups (12 ½ oz/350 g) mixed fresh berries

Instructions

  1. To make the sugar cookie crust, whisk together flour, baking soda, baking powder, and salt in a medium bowl, then set aside.
  2. Cream butter and ¾ cup of sugar in a mixer until light and fluffy, about 3 minutes.
  3. Add egg and vanilla extract, mix until combined.
  4. Incorporate the dry ingredients until the dough comes together, then form into a disc, wrap, and chill for 30 minutes.
  5. Preheat oven to 350°F (180°C) and prepare a baking sheet with parchment paper.
  6. Roll the chilled dough into a 10-inch circle on a floured surface and place it on the baking sheet.
  7. Sprinkle with the remaining ¼ cup of sugar and bake for 14-16 minutes until puffed and pale golden. Let cool for about 30 minutes.
  8. For the cream cheese topping, whisk cream cheese, powdered sugar, and vanilla in a medium bowl until smooth.
  9. Gradually whisk in heavy cream until thickened, then spread over the cooled cookie crust, leaving a border.
  10. Top with arranged fruit in alternating rows for contrast.
  11. Best served the day it’s assembled; keep refrigerated until ready to serve. Store leftovers in an airtight container for up to 2 days.
