  • 2 cups (400g) granulated sugar
  • 2 tbsp dry nonfat milk powder
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • 3/4 cup (168g) unsalted butter, room temp and sliced
  • 6 tbsp (80g) vegetable oil
  • 1/2 cup (120g) water, warm
  • 1 cup (240g) sour cream, room temp
  • 1 tsp white distilled vinegar
  • 2 tbsp vanilla bean paste
  • 4 large eggs + 2 egg yolk, room temp
  • 1 1/2 cups (336g) unsalted butter, room temp (really soft)
  • 3 cups (330g) powdered sugar, spooned and leveled
  • pinch of kosher salt
  • 1 tbsp vanilla bean paste
  • 2 tbsp water, slightly warm

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, whisk together the cake flour, sugar, milk powder, baking powder, baking soda, and salt.
  4. Add the sliced butter, vegetable oil, warm water, sour cream, vinegar, and vanilla bean paste. Mix until smooth.
  5. In a separate bowl, beat the eggs and yolks until frothy, then mix into the cake batter until well combined.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
  7. Bake for 35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.

Notes

Ensure your butter is at room temperature for the best texture in your cake.
If you don’t have vanilla bean paste, you can use vanilla extract instead, but the flavor will be slightly different.
