  • 2 teaspoons baking powder
  • ¾ teaspoon kosher salt
  • 1 cup (2 sticks / 227 g) unsalted butter, room temperature
  • 2 ½ cups (500 g) granulated sugar
  • 2 teaspoons pure vanilla extract
  • ½ teaspoon almond extract
  • 5 large egg whites, room temperature
  • 1 cup (245 g) whole milk, room temperature
  • 1 cup (2 sticks / 227 g) unsalted butter, softened
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 4 cups (500 g) confectioners' sugar
  • 2 tablespoons whole milk
  • 1 pinch kosher salt

Instructions

  1. Preheat the oven to 325°F and prepare a 9×13-inch baking dish by spraying it with nonstick cooking spray or lining it with parchment paper.
  2. In a large bowl, whisk together the cake flour, baking powder, and kosher salt, then set the mixture aside.
  3. In a stand mixer bowl with the paddle attachment, cream the unsalted butter, granulated sugar, vanilla extract, and almond extract on medium speed until light and fluffy, about 5 minutes. Scrape the bowl sides as needed during mixing.
  4. With the mixer set to low speed, add the egg whites one at a time, ensuring each is well incorporated before adding the next.
  5. Alternate adding the dry ingredient mixture with the whole milk in three parts, mixing on low speed until just combined. Avoid overmixing and scrape the bowl again if necessary.
  6. Pour the batter into the prepared baking dish and smooth it out evenly. Gently tap the baking dish on the counter to remove any air bubbles.
  7. Bake for 50 to 55 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs, without wet batter. Start checking at the 45-minute mark.
  8. Allow the cake to cool completely in the pan on a wire rack before applying the frosting.

Notes

Using room temperature ingredients helps achieve a smoother batter and better rise.
For added flavor, you can substitute half of the vanilla extract with additional almond extract.
Store any leftover cake in an airtight container at room temperature for up to three days.
