Description

Ingredients

  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon fine sea salt
  • 2 teaspoons lemon zest
  • 1 cup unsalted butter (cold, cut into pieces)
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 4 cups fresh or frozen blueberries
  • ½ cup granulated sugar
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 375°F and prepare a 9×13-inch baking pan with nonstick cooking spray and parchment paper.
  2. In a food processor, combine flour, sugar, baking powder, salt, and lemon zest, pulsing several times to mix.
  3. Add cold butter pieces to the mixture and pulse 10-12 times until it resembles coarse meal with some pea-sized chunks of butter.
  4. In a small bowl, whisk the egg and vanilla extract together. With the food processor running, stream in the egg mixture until combined. The dough will be crumby but hold together when squeezed.
  5. Press just over half of the dough into the bottom of the prepared baking pan and bake for 10 minutes, until the edges are golden and the center is just set.
  6. In a mixing bowl, combine blueberries, sugar, and cornstarch. Spread this mixture evenly over the baked crust.
  7. Sprinkle the remaining dough over the blueberry layer, squeezing it together for larger crumbs if desired.
  8. Bake for 35-40 minutes until the top is lightly golden and the fruit is bubbling. Cool completely in the pan before cutting into squares.

Notes

For a touch of extra flavor, consider adding a pinch of cinnamon to the crumb topping.
You can use frozen blueberries if fresh ones are not available; no need to thaw them before baking.
These bars can be enjoyed warm or chilled, and they store well in an airtight container for up to five days.
