- 1/2 cup dark brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1 cup shredded zucchini, squeeze out excess liquid
- 2 cups old fashioned oats
- 1 cup semisweet chocolate chips
- Flaky sea salt, for sprinkling
Instructions
- Preheat the oven to 350 degrees F and line a large baking sheet with parchment paper or a Silpat mat.
- In a medium saucepan, melt the butter over medium heat, stirring regularly until it foams, turns golden brown, and emits a nutty aroma (about 5-7 minutes). Transfer to a large bowl to cool to room temperature.
- In a small bowl, combine the flour, cinnamon, baking soda, salt, and nutmeg, whisking well.
- Once the brown butter is cool, mix in the brown and granulated sugars until blended. Stir in the egg and vanilla extract until smooth, then fold in the shredded zucchini.
- Add the dry ingredients to the wet mixture and mix until just combined. Gently fold in the oats and chocolate chips without overmixing.
- Using a cookie scoop (1.5 to 2 tablespoons), place dough onto the prepared baking sheet, leaving 2 inches between each cookie.
- Bake for 12 to 14 minutes, or until the edges are lightly browned while the centers remain soft.
- Remove from the oven and sprinkle with flaky sea salt. Let cool for 5 minutes on the pan before transferring to wire racks.
Notes
Make sure to squeeze out the excess liquid from the zucchini for the best texture.
