These Cherry Hand Pies are a delectable dessert featuring fresh cherries and a flaky pastry. They’re simple to prepare, perfect for satisfying a sweet tooth, and great for sharing or enjoying on your own.

- 5 ounces fresh cherries
- 2 tablespoons brown sugar
- 1/2 teaspoon almond extract
- 1 teaspoon lemon juice
- 2 tablespoons cornstarch
- 1 sheet of frozen puff pastry (1/2 of a box), defrosted
- 1 large egg yolk
- 2 teaspoons heavy cream
- granulated sugar for sprinkling on top
Instructions
- Preheat your oven to 400 degrees F.
- Pit the cherries to yield about 1 cup. In a bowl, mix cherries with brown sugar, almond extract, lemon juice, and cornstarch. Stir well and set aside.
- Flour your counter, unfold the puff pastry sheet, and roll it out slightly larger (about 1/2") on all sides. Cut out 2 circles using a 6" round cutter and transfer them to a parchment-lined baking sheet.
- Divide the cherry filling between the pastry circles, placing it on one side about 1/2" from the edge.
- In a small bowl, combine the egg yolk and heavy cream. Brush the mixture around the edges of the dough circles. Fold the dough over and crimp the edges to seal. Cut 3 small slits in the top of each pie and sprinkle with sugar.
- Bake for 18-21 minutes until golden brown and puffed. Allow to cool for 10 minutes before serving.
Notes
Make sure to pit the cherries properly to avoid any tough bites.
These hand pies are best served warm, as the filling will be quite hot.
You can customize the filling with other fruits or extracts if desired.
