  • ⅓ cup (67 g) brown sugar, packed
  • 2 large eggs, room temperature
  • 2 tablespoons (30 g) sour cream, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups shredded zucchini, lightly blotted with a towel
  • ½ cup (90 g) semi-sweet chocolate chips
  • 3 tablespoons unsalted butter, softened
  • 3 tablespoons unsweetened cocoa powder
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 1 cup (125 g) confectioners' sugar
  • 3 tablespoons whole milk or heavy cream, plus more as needed

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare an 8×8-inch square baking pan by spraying it with nonstick cooking spray and lining it with parchment paper.
  2. In a medium bowl, mix together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate large bowl, whisk the oil, granulated sugar, brown sugar, eggs, sour cream, and vanilla until the mixture is smooth. Then incorporate the shredded zucchini.
  4. Carefully add the dry ingredients to the wet ingredients and mix until just combined, being careful not to overmix.
  5. Gently fold in the chocolate chips until evenly distributed.
  6. Pour the batter into the prepared baking pan and spread it out evenly.
  7. Bake for 32 to 38 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let the cake cool completely in the pan on a wire rack before applying any frosting.

Notes

Ensure not to squeeze the shredded zucchini dry; lightly blotting it is sufficient.
For a moister cake, consider adding a bit more milk or cream to the frosting as needed.
