Ingredients

  • 1/2 cup warm water
  • 1 envelope instant yeast
  • 4 1/2 cups all-purpose flour, plus more if needed
  • 4 large eggs
  • 1 1/4 cups sugar, divided
  • 2 teaspoons coarse salt
  • 1 stick unsalted butter, at room temperature, plus 1/2 stick, melted, and more for dish
  • 2 tablespoons ground cinnamon
  • 1 cup powdered sugar
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons whole milk
  • 1 teaspoon vanilla extract

Instructions

  1. In a stand mixer, combine warm water, yeast, and 1/2 cup flour until a thick paste forms.
  2. Add eggs, 1/4 cup sugar, and 2 teaspoons salt. Stir until combined.
  3. Fit the mixer with a dough hook and add the remaining 4 cups of flour. Knead on medium speed for 4 to 5 minutes until smooth.
  4. Add 1 stick of room temperature butter. Continue kneading until incorporated and the dough is smooth and elastic, about 10 minutes. Adjust with flour if the dough is sticky.
  5. Transfer dough to a clean bowl, cover, and let rise until doubled, about 1 1/2 to 2 hours. Punch down and press out air bubbles.
  6. In a small bowl, combine the remaining 1 cup sugar and cinnamon. Lightly butter a 9-inch pie plate.
  7. Roll dough into 1-inch balls, dip in melted butter, then roll in cinnamon sugar. Place in the prepared pie plate, stacking to form a dome shape. Cover and let rise until doubled, about 1 hour.
  8. Preheat oven to 350°F. Bake the balls until golden and firm, about 50 to 55 minutes.
  9. While baking, prepare glaze by whisking together powdered sugar, salt, melted butter, milk, and vanilla until smooth.
  10. Let bites cool for 15 minutes before drizzling with the glaze. Serve warm.

Notes

Ensure to let the dough rise adequately for the best texture.
Feel free to adjust the amount of cinnamon sugar to taste for more or less sweetness.
