- 10 tablespoon butter, melted
- ⅔ cup packed light brown sugar
- 1 ½ cups all-purpose flour
- 1 tablespoon ground cinnamon

- ¼ cup unsalted butter, at room temperature
- 2 tablespoons vegetable oil
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1 large egg white, at room temperature
- 1 ⅓ cups all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- ⅓ cup sour cream
- ¼ cup milk
Instructions
- Preheat the oven to 350°F and line an 8 x 8-inch square pan with parchment paper on all sides.
- Make the crumb topping by combining melted butter, brown sugar, flour, cinnamon, and salt in a medium bowl. Stir until fully combined and set aside to thicken.
- Prepare the crumb cake by mixing together butter, oil, and granulated sugar in a stand mixer. Beat on medium speed for about 1 minute until pale and pearly white.
- Scrape down the sides of the bowl and add the egg, egg white, and vanilla extract. Beat for about 2 minutes until fluffy.
- In another bowl, whisk flour, baking powder, baking soda, and salt. With the mixer on low, add half the dry ingredients, then the sour cream and milk, and finally the remaining dry ingredients, mixing until just combined.
- Transfer the batter to the prepared pan and spread evenly. Sprinkle the crumb topping over the batter in small and large pieces.
- Bake for about 35 minutes, until golden brown and a butter knife inserted into the center comes out clean. Let cool completely before dusting with powdered sugar and serving.
Notes
For an extra touch, add chopped nuts to the crumb topping.
