Description

These creamy lemon bars are a delightful treat with a buttery crust and a refreshing lemon filling. Perfect for gatherings or a sweet snack at home, they bring a burst of citrus flavor that’s hard to resist!


Ingredients

  • 1 cup (142g) all-purpose flour
  • ¼ cup (30g) powdered confectioner's sugar
  • ¼ teaspoon salt
  • ⅛ teaspoon baking powder
  • 7 tablespoon (100g) unsalted butter, softened but cool and cut into small cubes
  • ¾ cup (150g) granulated sugar
  • 1 tablespoon lemon zest
  • 3 large eggs at room temperature
  • ⅓ cup (80ml/100g) sweetened condensed milk
  • ⅓ cup (80ml) freshly squeezed lemon juice (from 23 lemons)
  • pinch of salt
  • 1 tablespoon (9g) all-purpose flour
  • powdered sugar, for topping

Instructions

  1. Preheat the oven to 325°F and line an 8×8-inch square metal baking pan with aluminum foil, greasing the bottom and sides lightly with butter.
  2. In a medium bowl, mix flour, powdered sugar, salt, and baking powder. Add butter and blend with fingertips until it resembles coarse crumbs. Press this mixture evenly into the prepared pan, building up about ½-inch along the edges. Bake for 20-25 minutes until golden.
  3. While the crust is baking, prepare the filling. Combine sugar and lemon zest in a bowl, rubbing them together until fragrant. Gently whisk in the eggs, then mix in condensed milk, lemon juice, and salt. Sift in flour and stir until smooth. Set aside until the crust is ready.
  4. Once the crust is baked, slowly pour the filling over it and bake for another 16-20 minutes until just set in the center. It should jiggle slightly but not be loose. Do not over-bake.
  5. Let the pan cool on a wire rack, then cover and refrigerate for 2 hours before slicing.

Notes

For best flavor, use freshly squeezed lemon juice.
Keep leftover bars refrigerated for up to a week.
Dust with powdered sugar before serving for an elegant touch.
