Description

This Cucumber and Onion Salad offers a burst of flavor with its crisp cucumbers and tangy onion, all enveloped in a zesty dressing. Perfect for a quick, healthy meal or a refreshing side dish for any occasion.


Ingredients

  • ½ cup + 2 tablespoons granulated sugar
  • 2 teaspoons kosher salt
  • ½ teaspoon coarse ground black pepper
  • 4 tablespoons water
  • ½ cup white vinegar
  • 1 large english cucumber, sliced ¼ inch thick
  • ½ large yellow onion, sliced thin
  • 2 cloves garlic, smashed
  • 1 teaspoon finely chopped fresh dill

Instructions

  1. In a deep container with a tight-fitting lid, stir together the sugar, salt, pepper, water, and vinegar until the sugar is mostly dissolved.
  2. Add the cucumber, onion, and garlic to the container and stir until all ingredients are submerged in the liquid.
  3. Let the salad sit for 2 hours, then drain, garnish with dill, and serve.

Notes
