- ¼ cup (60 ml) water
- ⅓ cup (67 g) granulated sugar
- 1 tablespoon (15 ml) lemon juice
- 1 tablespoon (15 g) cornstarch
- 2 tablespoons cold water
- 1 tablespoon (15 g) salted butter
- ¼ teaspoon vanilla extract
Instructions
- Combine blueberries, ¼ cup water, granulated sugar, and lemon juice in a medium saucepan over medium-high heat.
- Stir frequently until the blueberries release their juices, about 5-7 minutes, using a spoon or spatula to help break them down.
- In a small dish, whisk cornstarch and 2 tablespoons cold water until well combined.
- Add the cornstarch mixture to the blueberry mixture and stir well.
- Bring the mixture to a rolling boil while stirring constantly, then reduce heat and simmer until the sauce coats the bottom of a metal spoon.
- Remove from heat, stir in the butter and vanilla extract until the butter melts.
- Serve warm, adjusting the sauce's consistency with extra water if needed.
