Ingredients
Scale

- 175 g light brown soft sugar
- 175 g golden syrup
- 400 g porridge oats
- 100 g raisins
Instructions
- Preheat the oven to 190ºC/170ºC fan and line a 9" square tin with parchment paper.
- In a heavy-based pan, add the butter, sugar, and syrup.
- Melt them together over low-medium heat until the sugar dissolves, ensuring it doesn't boil.
- Stir in the oats until they're fully coated with the butter-sugar mixture, but not too wet.
- If using, fold in the raisins as well.
- Firmly press the mixture into the lined tin using a spatula and a metal spoon.
- Bake for 25-30 minutes until golden brown, with a slight wobble when removed from the oven.
- Allow to cool completely in the tin, then cut into portions and enjoy.
Notes
For added flavor, consider using mixed dried fruits instead of raisins.
Adjust baking time for a softer or crunchier flapjack based on your preference.
