- 1 1/2 cups butter softened
- 1 cup powdered sugar
- 1 1/2 teaspoons vanilla extract
- 3 cups all purpose flour
- 1/4 teaspoon salt
- 11 ounces caramels (unwrapped)
- 1 tablespoon evaporated milk or cream
- 2 cups milk chocolate chips
- 2 teaspoons shortening
Instructions
- Preheat the oven to 350 degrees F. Line a sheet pan with parchment paper or a nonstick baking mat.
- In a mixer, beat the softened butter until light and fluffy. Add the powdered sugar and mix until combined.
- Add the vanilla extract, flour, and salt. Mix until fully combined.
- Wrap the dough in plastic wrap and chill in the freezer for 20 minutes.
- Flour your work surface and roll out the dough to a 1/2 inch thickness.
- Cut out cookies with a 2 or 3 inch round cookie cutter and place them on the prepared baking sheet, 1 inch apart.
- Bake in the oven for 12-13 minutes, or until the edges are light brown. Repeat with the remaining dough.
- Cool the cookies on a wire rack.
- In a bowl, combine the caramels and evaporated milk. Microwave in 45 second increments until melted, stirring until smooth.
- Spoon caramel onto each cookie, spreading it to the edges.
- Let the cookies sit for about 20 minutes for the caramel to firm up.
- Melt the milk chocolate chips and shortening in a bowl in the microwave, using 30 second increments to avoid burning. Stir until smooth.
- Spoon melted chocolate onto each cookie over the caramel layer and spread it evenly.
- Allow the chocolate to harden before serving.
Notes
To ensure an even bake, keep cookies spaced on the baking sheet.
For variation, consider adding nuts or sea salt on top of the finished cookies.
