- 1 1/4 cups almond flour
- 3/4 cup finely shredded mozzarella cheese
- 1 Tablespoon baking powder
- 1 teaspoon salt
- 4 Tablespoons unsalted butter (soft but not melted)
- 3 large eggs
- 2 Tablespoons salted butter (melted)
Instructions
- Preheat your oven to 400ºF and grease a muffin pan with butter.
- Combine the almond flour, mozzarella cheese, baking powder, and salt together in a bowl.
- Add the softened butter to the almond flour mixture and work it in with your fingertips until the mixture resembles a crumbly texture.
- Add the eggs in and mix vigorously with a fork until a lumpy dough is created.
- Place about two tablespoons of the biscuit batter into each muffin tin.
- Bake for 10-15 minutes or until they are golden brown.
- Brush the melted butter onto the tops of the biscuits and serve warm.
Notes
For extra flavor, consider adding herbs to the dough.
These biscuits can be frozen for later use. Reheat them in the oven before serving.
