Instructions
- Place softened goat cheese into a medium bowl.
- Add minced pitted cherries to the bowl.
- Add 1 1/2 tablespoons of honey to the bowl.
- Combine goat cheese, cherries, and honey thoroughly until well mixed.
- Spray your hands with nonstick cooking spray.
- Roll the cheese mixture into a single ball.
- Place finely chopped pecans into a shallow bowl.
- Roll the cheese ball in the pecans.
- Gently press the pecans into the cheese ball until fully coated.
- Wrap the coated cheese ball tightly in plastic wrap.
- Refrigerate for at least several hours to allow flavors to blend and cheese to firm up.
- When ready to serve, remove the plastic wrap.
- Place the cheese ball on a serving board.
- Drizzle additional honey over the cheese ball.
- Serve immediately with crackers, crusty bread, apple slices, or pear slices.
