- 1 cup (125g) pecans
- 2 tsp vanilla extract
- 1 tbsp fresh lemon juice
- 2/3 cup (135g) light brown sugar, packed
- 1 tsp ground cinnamon
- 1 tbsp cornstarch
- 1 1/4 cup (165g) all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup (100g) light brown sugar, packed
- 1/2 cup (110g) unsalted butter, chilled, and cubed
- 1/2 cup (120g) heavy cream + 3 tbsp
- 2 tbsp raw sugar
Instructions
- Preheat the oven to 350°F and spread the pecans on a baking pan.
- Toast the pecans for 8-10 minutes until they are fragrant. After that, increase the oven temperature to 375°F.
- In a cast iron skillet, combine the sliced peaches, vanilla extract, fresh lemon juice, brown sugar, cinnamon, and cornstarch, and mix well using your hands.
- Chop the toasted pecans roughly and fold them into the peach mixture, ensuring even distribution.
- Bake the peaches for 10 minutes while preparing the cobbler topping.
Notes
For a gluten-free option, use a gluten-free all-purpose flour blend.
