Instructions
- Beat together the softened butter and granulated sugar in an electric mixer on medium-high speed for about 2 minutes, occasionally scraping down the sides.
- Add the vanilla extract and eggs to the mixture, beating until well combined.
- Mix in the all-purpose flour, baking powder, and kosher salt until fully blended.
- Preheat your oven to 350°F (175°C) and line a 15x10x1 inch baking sheet with parchment paper.
- Using floured hands, drop the cookie dough onto the prepared baking sheet and press it evenly into the pan.
- Bake for 15-18 minutes, or until the edges start to brown, then remove from the oven and allow to cool completely.
- For the frosting, beat together the softened butter and vanilla in a bowl on high for about 2 minutes until fluffy.
- Add the pinch of salt, powdered sugar, and milk, mixing for another 3-5 minutes until fluffy and well combined.
- If desired, add a drop of blue food coloring and mix until incorporated.
- Spread the frosting over the cooled cookie bars and top with sprinkles if using. Cut into squares and serve.
