Description

Ingredients

  • 16 oz Cream cheese (room temperature)
  • 1/2 cup White granulated sugar
  • 1 tsp Pure vanilla extract
  • 1/2 cup Sour cream (room temperature or greek yogurt)
  • 2 Large eggs (room temperature)
  • 1 Egg yolk (room temperature)
  • 1/4 cup Rainbow jimmie sprinkles
  • 1 3/4 cup All-purpose flour
  • 1 TBSP Cornstarch
  • 1 tsp Baking powder
  • 1/4 tsp Baking soda
  • 1/2 tsp Salt
  • 1/2 cup Oil (canola or vegetable)
  • 1 cup White granulated sugar
  • 1 TBSP Pure vanilla extract
  • 1/4 cup Sour cream (room temperature or greek yogurt)
  • 2 Large eggs (room temperature)
  • 1/2 cup Buttermilk (room temperature)
  • 1/3 cup Rainbow jimmie sprinkles
  • 2 oz Cream cheese (room temperature)
  • 1 TBSP Heavy cream
  • 1 cup Heavy cream
  • 1/4 cup Powdered sugar
  • 1 tsp Pure vanilla extract

Instructions

  1. Preheat the oven to 325℉ and prepare a 9-inch springform pan with nonstick spray and parchment paper.
  2. Beat cream cheese and sugar on high speed for 2 minutes and scrape the bowl.
  3. Mix in vanilla and sour cream, then add eggs and egg yolk, mixing until just combined.
  4. Mix the batter gently with a spatula, adding sprinkles only after preparing the cake batter.
  5. Sift flour, cornstarch, baking powder, baking soda, and salt in another bowl.
  6. Beat together butter, oil, and sugar until fluffy and pale.
  7. Add in vanilla, sour cream, and eggs, mix until combined, scraping the bowl.
  8. Incorporate dry ingredients and buttermilk, mixing gently to combine and fold in sprinkles.
  9. Spread cake batter in the prepared pan, followed by cheesecake batter on top.
  10. Bake for 55-65 minutes until the center jiggles slightly, cool on a rack, and chill for at least 6 hours or overnight.
  11. For whipped cream, beat cream cheese and heavy cream until creamy, then beat heavy cream, powdered sugar, and vanilla until thickened.
  12. Combine both mixtures and spread whipped cream on top of the cheesecake and add more sprinkles.

Notes

For best results, ensure all ingredients are at room temperature before beginning.
Chilling overnight will enhance the flavors and improve texture.
