- ¾ cup (90 g) confectioners' sugar
- ½ teaspoon kosher salt
- 1 tablespoon fresh key lime zest
- 2 tablespoons key lime juice, or regular lime juice
- ½ teaspoon vanilla extract
- 2 ¼ cups (280 g) all-purpose flour
- 4 ounces cream cheese, room temperature
- ¼ cup (½ stick / 57 g) unsalted butter, room temperature
- 2 to 2 ½ cups (240 g to 300 g) confectioners' sugar
- 1 tablespoon key lime juice
- 1 teaspoon key lime zest
- 1 pinch kosher salt
Instructions
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- In a large bowl, cream the softened butter, confectioners' sugar, kosher salt, and key lime zest until the mixture is light and fluffy, about 3 to 4 minutes.
- Incorporate the key lime juice and vanilla extract into the mixture, mixing until fully combined.
- Sift in the all-purpose flour and mix just until a soft dough forms. Avoid overmixing it.
- Scoop portions of dough, approximately 2 tablespoons each, roll them into balls, and place them on the prepared baking sheet.
- Use the bottom of a glass to gently flatten each cookie to about ½ inch thick.
- Bake the cookies in the preheated oven for 10 to 13 minutes, until the edges are set and just beginning to turn golden.
- Allow the cookies to cool completely on the pan, or transfer them to a wire rack before applying any frosting.
Notes
For a sweeter cookie, adjust the amount of confectioners’ sugar to taste.
Ensure the butter is at room temperature for better mixing and texture.
Cookies can be stored in an airtight container for up to a week.
