- 3 pounds red potatoes
- 30 ounces Hellman’s real mayonnaise
- 1 pound bacon cooked and crumbled
- 1 cup shredded colby-jack cheese
- 3 green onions sliced
- 2 teaspoons kosher salt
- ½ teaspoon black pepper
Instructions
- Boil the potatoes in a large pot, covered, until fork tender.
- Remove the potatoes from heat and let them cool for about ten minutes; the skin should easily peel off.
- Dice the cooled potatoes into small pieces to avoid mashing them.
- In a large bowl, combine the diced potatoes with mayonnaise, crumbled bacon, shredded cheese, sliced onions, kosher salt, and black pepper.
- Mix everything until well blended.
- Chill in the refrigerator until ready to serve.
Notes
For extra flavor, consider adding chopped hard-boiled eggs.
Make it a day ahead for the flavors to meld together wonderfully.
You can use any type of potatoes you prefer, but red potatoes work best.
