Description

This Loaded Potato Salad is a delicious blend of creamy goodness with crispy bacon and fresh green onions. Perfect as a side for any meal, it’s easy to make, and full of flavor. Ideal for your next picnic, barbecue, or family dinner.


Ingredients

  • 3 pounds red potatoes
  • 30 ounces Hellman’s real mayonnaise
  • 1 pound bacon cooked and crumbled
  • 1 cup shredded colby-jack cheese
  • 3 green onions sliced
  • 2 teaspoons kosher salt
  • ½ teaspoon black pepper

Instructions

  1. Boil the potatoes in a large pot, covered, until fork tender.
  2. Remove the potatoes from heat and let them cool for about ten minutes; the skin should easily peel off.
  3. Dice the cooled potatoes into small pieces to avoid mashing them.
  4. In a large bowl, combine the diced potatoes with mayonnaise, crumbled bacon, shredded cheese, sliced onions, kosher salt, and black pepper.
  5. Mix everything until well blended.
  6. Chill in the refrigerator until ready to serve.

Notes

For extra flavor, consider adding chopped hard-boiled eggs.
Make it a day ahead for the flavors to meld together wonderfully.
You can use any type of potatoes you prefer, but red potatoes work best.
