- 2/3 cup (140 grams) granulated sugar
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 1 1/4 cups (152 grams) all-purpose flour
- 8 grams (2 tablespoons) very high quality bright green matcha powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and line a small baking sheet with parchment paper.
- In a bowl, stir together the melted butter, sugar, egg yolks, and vanilla extract until well combined.
- Sprinkle the flour, matcha powder, baking soda, and salt over the mixture, then stir just until combined.
- Press the dough flat in the bowl, divide it in half, and form 12 cookie balls (6 from each half).
- Roll each dough ball in your hands, coat lightly with extra granulated sugar, then space them evenly on the prepared baking sheet.
- Bake for 10-11 minutes until the cookies spread, crackle, and appear dry on top. Allow them to rest for 2 minutes before transferring to a wire rack to cool.
