Ingredients

  • 8 tablespoons (113 grams) unsalted butter
  • 2/3 cup (140 grams) granulated sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 1/4 cups (152 grams) all-purpose flour
  • 8 grams (2 tablespoons) very high quality bright green matcha powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a small baking sheet with parchment paper.
  2. In a bowl, stir together the melted butter, sugar, egg yolks, and vanilla extract until well combined.
  3. Sprinkle the flour, matcha powder, baking soda, and salt over the mixture, then stir just until combined.
  4. Press the dough flat in the bowl, divide it in half, and form 12 cookie balls (6 from each half).
  5. Roll each dough ball in your hands, coat lightly with extra granulated sugar, then space them evenly on the prepared baking sheet.
  6. Bake for 10-11 minutes until the cookies spread, crackle, and appear dry on top. Allow them to rest for 2 minutes before transferring to a wire rack to cool.
