- ¾ cup (93g) all purpose flour
- ¾ cup (64g) quick cook oats
- ¾ cup (150g) packed brown sugar
- 1 teaspoon cinnamon
- 6 tablespoons (78g) cold unsalted butter, diced
- ¼ teaspoon salt
- 1 pound strawberries, hulled and sliced
- 2 cups blueberries, frozen or fresh
- ½ cup (50g) granulated sugar
- 1 tablespoon lemon juice
- 3 tablespoons (24g) cornstarch
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, prepare the crumble by mixing together the flour, brown sugar, oats, cinnamon, and salt. Incorporate the cold, diced butter using a pastry cutter until the mixture resembles small crumbs, using your hands if necessary. Set aside.
- In another large bowl, combine the sliced strawberries and blueberries. Gently mix in the granulated sugar, lemon juice, and cornstarch until evenly coated. Spread the berry mixture in the bottom of an 8-inch square pan.
- Distribute the crumble topping over the berry layer, pressing down slightly to compact it.
- Bake for 30 to 33 minutes, or until the topping is golden brown and crunchy. Allow cooling slightly before serving warm, or at room temperature, preferably with whipped cream or ice cream.
Notes
Feel free to use frozen berries if fresh ones are not available.
Letting the crisp cool for a bit allows the filling to set, preventing a messy serving.
Store leftovers in the refrigerator for up to 3 days.
