Description

This Oatmeal Banana Bread offers irresistible flavor with its sweet bananas, hearty oatmeal, and comforting spices. An easy homemade loaf, perfect for breakfast or snacks!


Ingredients

  • 1/2 cup unsalted butter, softened to room temperature
  • 1 cup granulated white sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup mashed bananas, about 2 large ripe bananas
  • 1 1/2 cups all-purpose flour
  • 3/4 cup old fashioned oatmeal, plus optional 2 Tablespoons for topping
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/2 cup sour cream

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare a 9-inch loaf pan by spraying it with baking spray and lining the bottom with parchment paper.
  2. In a large mixing bowl, cream the softened butter and sugar together for several minutes until light and fluffy. Incorporate the eggs and vanilla extract and mix until well combined. Stir in the mashed bananas.
  3. Slowly add the flour, oats, cinnamon, baking powder, baking soda, and salt. Mix until just combined, then carefully fold in the sour cream.
  4. Transfer the batter into the prepared loaf pan. Optionally, sprinkle the top with the additional 2 tablespoons of oats. Bake in the preheated oven for 60 minutes, or until a toothpick inserted in the center comes out clean.
  5. Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Make sure to use ripe bananas for the best flavor.
This bread can be stored in an airtight container for up to a week.
Optionally, add nuts or chocolate chips for extra flavor.
