Description

Ingredients

  • 1/3 cup (67g) granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg, room temp
  • 16 oz bag frozen peach slices, thawed
  • 1/4 cup (50g) granulated sugar
  • 1 tbsp cornstarch
  • 1/2 tsp cinnamon
  • 1/2 cup (100g) packed light brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 3/4 cups (354g) all-purpose flour or 1-to-1 gluten-free baking flour, spooned and leveled
  • 1/2 tsp kosher salt
  • 1 tsp baking powder
  • 1 cup (224g) unsalted butter, melted and cooled

Instructions

  1. Mash the cream cheese in a medium bowl with a fork until smooth.
  2. Add in the granulated sugar and vanilla extract, mixing until the mixture is smooth.
  3. Incorporate the egg and whisk everything together until creamy and smooth. Set the mixture aside.

Notes

For a dairy-free option, substitute the cream cheese with a dairy-free alternative.
Make sure frozen peach slices are thawed for the best texture in the filling.
