- 1 tsp pure vanilla extract
- 1 tsp honey
- 2 large eggs, room temperature
- 2 tbsp unsalted butter, melted
- 1/2 cup white granulated sugar
- 2 tsp ground cinnamon
- 4 peaches, 1 lb cubed
- 2/3 cup brown sugar, light brown sugar packed
- 1/2 tsp ground cinnamon
- 1 tbsp lemon juice
- 1 tbsp cornstarch
Instructions
- In a medium bowl, mix the flour, baking soda, ground cinnamon, cornstarch, and salt together and set aside.
- In a large bowl, beat the room temperature butter, brown sugar, and granulated sugar with a mixer on high speed for 2 minutes until pale and fluffy.
- Add the eggs, vanilla extract, and honey, mixing on medium speed until well combined. Slowly add the dry ingredients and mix on low until just combined.
- Preheat the oven to 350°F and line two cookie sheets with parchment paper. Let the cookie dough sit for 10 minutes to reduce spreading.
- Use a large cookie scoop (2oz) to form cookie dough balls, placing 6 balls on each cookie sheet.
- Bake in the preheated oven for 12-14 minutes until the edges are lightly golden. After 2 minutes, press the center gently with a teaspoon to create an indent.
- Allow the cookies to cool completely on the cookie sheet.
Notes
For the best flavor, use ripe peaches.
These cookies can be stored in an airtight container for up to a week.
