Description

Peach Crumb Bars offer a perfect blend of fresh peaches and a buttery crumb topping. Easy to make, they’re ideal for any gathering or a sweet treat at home.


Ingredients

  • 2 ¾ cups (360 grams) all-purpose flour
  • 1 cup (213 grams) packed light or dark brown sugar
  • 1 tablespoon lemon zest
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup (226 grams) butter, cold and cut into small cubes
  • 1 large egg, whisked lightly to break it up
  • 45 cups (680840 grams) peaches, chopped into ½-inch pieces
  • ¼ cup (50 grams) granulated sugar
  • 2 tablespoons lemon juice
  • 4 teaspoons cornstarch
  • ¼½ teaspoon ground cinnamon
  • ⅛ teaspoon ground ginger (optional)

Instructions

  1. Preheat the oven to 375°F. Grease a 9×13 inch baking pan and line it with parchment paper, allowing overhang for easy removal later.
  2. In a medium bowl, mix together the flour, brown sugar, lemon zest, baking powder, and salt. Add the cold butter, tossing it with the dry ingredients.
  3. Using a fork or pastry cutter, blend the cubed butter until the mixture resembles small peas. Stir in the whisked egg until just combined, creating a crumbly dough.
  4. Press half of the dough into the prepared baking pan, reserving the remaining dough for the topping.
  5. In a large bowl, combine the chopped peaches with granulated sugar, lemon juice, cornstarch, cinnamon, and ginger. Spread this peach mixture evenly over the crust in the pan.
  6. Sprinkle the reserved crumb mixture on top of the peaches, squeezing it together to form larger chunks.
  7. Bake for 45-55 minutes or until the top is lightly golden brown. Allow to cool completely before cutting into squares, or serve warm with vanilla ice cream.
  8. For best results, refrigerate before slicing. Bars can be frozen for up to 1 month.

Notes

These bars can be stored in the refrigerator to maintain freshness. They are easier to slice when chilled.
Unsliced bars can be wrapped and frozen for up to a month. Allow to thaw in the refrigerator before serving.
