- 3 cups graham cracker crumbs
- 2 tablespoons light brown sugar, packed
- ½ cup unsalted butter, melted
- 16 ounces cream cheese, softened to room temperature
- 1 cup powdered sugar
- 1 teaspoon pure vanilla extract
- 16 ounces cool whip, thawed, divided
- 2 cans peach pie filling (21 ounces each)
Instructions
- Grease a 13×9 baking dish with butter or shortening, or line it with parchment paper and set it aside.
- In a mixing bowl, mix the graham cracker crumbs, brown sugar, and melted butter until all crumbs are moistened. Reserve about 1/4 cup for the topping.
- Press the crumbs firmly into the bottom of the prepared baking dish and freeze the crust while making the filling.
- For the filling, beat together the cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Fold in 8 ounces of whipped topping and spread over the chilled crust.
- Pour both cans of peach pie filling over the cheesecake layer and spread evenly. Carefully add the remaining 8 ounces of Cool Whip on top, and sprinkle with the reserved graham cracker crumbs.
- Cover with plastic wrap and chill in the refrigerator for at least 6 hours or overnight.
Notes
For an extra touch, fresh peach slices can be added as a topping before serving.
Using a non-stick spray can help with the release of the crust from the pan.
Ensure the cream cheese is at room temperature for smooth mixing.
